Chicken and Prep

Prep the wings
Pat the wings very dry with paper towels. Remove any excess skin and separate wingettes from drumettes if needed. Place in a large bowl.

Season wings with kosher salt, black pepper, and garlic powder. Add baking powder and the tablespoon of neutral oil. Toss thoroughly so wings are evenly coated. Refrigerate uncovered for at least 30 minutes (or up to 4 hours) — this helps dry the skin for extra-crisp results.
Coating and Frying

Combine the flour, cornstarch, paprika, onion powder, and cayenne in a shallow bowl or tray. Toss the wings in the dry mix (light dusting only) if you want an extra crisp surface — the baking powder does most of the work, so a light coating is sufficient.

Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 1 to 1 1/2 inches and heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread; it should brown in about 45 seconds.

Fry the wings in batches of 6–8, without overcrowding, for 8–10 minutes per batch until deep golden and an internal temperature of 165°F (74°C) is reached; for crispier results, remove and rest on a wire rack and increase oil temperature to 375°F and fry for an additional 1–2 minutes per batch to double-fry.

Transfer cooked wings to a paper towel–lined tray or wire rack while you prepare the sauces. Keep warm in a 200°F (95°C) oven if making multiple batches.
Buffalo Sauce

In a small saucepan over low heat, melt 4 tablespoons butter. Add 2/3 cup hot sauce, apple cider vinegar, brown sugar, Worcestershire sauce, and optional extra hot sauce. Whisk until butter is fully incorporated and sauce is glossy, about 2–3 minutes. Taste and adjust seasoning. Keep warm.

Toss one third of the cooked wings in the buffalo sauce in a large heatproof bowl until evenly coated. Transfer to a serving platter.
Jamaican Jerk Toss

In a small bowl, combine the jerk sauce, lime juice, brown sugar, and optional minced scotch bonnet/habanero. Stir to combine and taste, adjusting lime or sugar as desired.

Toss another third of the cooked wings in the jerk sauce until evenly coated. Place on a separate platter for serving.
Habanero Hot (Legendary Spicy)

For the habanero-hot wings, gently melt 2 tablespoons butter in a small saucepan over low heat. Add 1/2 cup habanero sauce, honey, and lemon juice. Warm and whisk until incorporated, about 1–2 minutes. Remove from heat.

Blue Cheese Dressing
In a bowl, combine 1/2 cup crumbled blue cheese, 1/4 cup mayonnaise, 1/4 cup buttermilk, 1 teaspoon lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently, leaving some chunks of blue cheese for texture. If too thick, add additional buttermilk 1 teaspoon at a time to reach desired consistency. Chill until ready to serve.

House Ranch (Greek Yogurt Style)
In a separate bowl, whisk together 1/2 cup plain Greek yogurt, 1 tablespoon chopped chives, 1 tablespoon chopped parsley, 1 minced garlic clove, 1/4 cup mayonnaise, 1/4 cup buttermilk, 1/4 teaspoon dried dill (optional), 1 teaspoon lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Adjust thickness with additional buttermilk if needed. Refrigerate for at least 15 minutes to let flavors meld.
To Serve

Arrange buffalo, jerk, and habanero wings on separate platters or a shared board. Serve with bowls of blue cheese and ranch dressings, celery and carrot sticks, and lime wedges on the side.
