Prepare the filling

Prep vegetables
Finely shred the cabbage and, if using, grate or finely shred the carrot. Place them in a bowl, sprinkle with a pinch of salt, toss, and let sit 5 minutes. Squeeze out excess moisture firmly in a clean towel or paper towels—removing water prevents soggy potstickers.

Combine ingredients
In a medium bowl combine the ground chicken (or crumbled firm tofu), squeezed cabbage/carrot, sliced scallions (reserve a few for garnish), minced garlic, grated ginger, soy sauce, sesame oil, rice wine vinegar, cornstarch, salt, and black pepper. Mix with a spatula or your hands until evenly combined and tacky. Chill 10 minutes if mixture is very soft—chilling firms it up and makes wrapping easier.
Assemble potstickers

Set a small bowl of cold water next to your work surface and lightly dust wrappers with flour to keep them from sticking. Place one wrapper in your palm. Put about 1 teaspoon to 1 tablespoon (depending on wrapper size) of filling in the center—enough to mound but not overflow when sealed.

Dip your finger in the water and moisten the edge of the wrapper. Fold wrapper in half over the filling to form a half-moon. Press center to seal. Create pleats along one edge by folding small sections of one side over the other, pressing to seal as you go. Repeat until all wrappers are filled, placing finished potstickers on a lightly flour-dusted tray so they don’t stick. You should end up with about 24–30 potstickers depending on filling amount.
Cook potstickers (pan-fry + steam)

Heat a large nonstick or well-seasoned cast-iron skillet over medium-high heat and add 1 to 2 tablespoons neutral oil, swirling to coat the bottom.

Arrange potstickers flat-side down in a single layer without crowding (cook in batches if necessary). Fry 2–3 minutes until bottoms are golden brown and crisp. Reduce heat to medium-low.

Carefully pour 1/4 cup (for a single batch) to 1/2 cup water into the pan—enough to come about 1/4 inch up the sides of the potstickers but not submerge them. Immediately cover with a tight-fitting lid to trap steam. Steam 5–6 minutes, or until filling is cooked through (chicken should reach 165°F / 74°C). If using tofu/veg filling, steam until wrappers are tender and filling is hot, about 4–5 minutes.

Remove lid and cook an additional 1–2 minutes to evaporate remaining water and re-crisp the bottoms. Transfer potstickers to a serving plate, bottom-side up to show the crisp side, or upright—your choice.
Quick Thai Sweet Chili Sauce (if making from scratch)

If using store-bought sweet chili sauce, pour into a small bowl and skip the next steps. To make a quick version: in a small saucepan combine 2 tablespoons sugar, 2 tablespoons rice vinegar, 2 tablespoons water, 1/2 teaspoon fish sauce (or soy sauce), and 1/4 teaspoon red pepper flakes. Bring to a gentle simmer, stirring to dissolve sugar.

Mix 1/2 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Stir slurry into the simmering sauce and cook 30–60 seconds until slightly thickened. Remove from heat and let cool; adjust seasoning (add a pinch of salt, more sugar, or more vinegar) to taste. Let cool to warm/room temperature before serving with potstickers.
Serve

Arrange potstickers on a platter. Garnish with toasted sesame seeds and reserved sliced scallions. Serve immediately with Thai sweet chili sauce for dipping alongside optional soy sauce or a vinaigrette dipping sauce.

Leftovers: store cooled potstickers in an airtight container in the refrigerator up to 3 days. Reheat in a skillet with a splash of water and covered until heated through, finishing uncovered to re-crisp the bottoms.
