Prepare Chicken & Dry Rub

Spatchcock/halve the chicken
If not already halved, place the chicken breast-side down on a cutting board. Use kitchen shears to cut along one side of the backbone and then the other to remove it, or slice through the center to create a half chicken (or cut the whole bird into two halves). Pat the half chicken dry thoroughly with paper towels.

Make the dry rub
In a small bowl, combine kosher salt, black pepper, brown sugar, paprika, garlic powder, onion powder, ground cumin and cayenne (if using). Mix thoroughly so the sugar is evenly distributed among the spices.

Season the chicken
Lightly brush the chicken skin and cavity side with olive oil. Rub the dry spice mix evenly over the skin and the exposed flesh of the half chicken, pressing gently so the rub adheres. Let the seasoned chicken rest uncovered in the refrigerator for 30–60 minutes to dry the skin and let flavors meld (or rest at room temperature for 20–30 minutes if short on time).
Smoke the Chicken

Prepare smoker or grill
Preheat a smoker to 225–250°F (107–121°C) for indirect cooking. If using a charcoal or gas grill, set up for indirect heat and maintain the same target temperature. Drain soaked wood chips and add to the smoker box or coals to generate smoke.

Initial smoke
Place the half chicken skin-side up on the smoker grates away from direct flame. Insert a probe thermometer into the thickest part of the breast without touching bone. Smoke until the internal temperature reaches 150°F (66°C), about 60–75 minutes depending on size and smoker stability. Maintain steady smoke and temperature during this phase to build a good smoke flavor and bark.
Glaze and Finish

Prepare the glaze
In a small bowl, whisk together the BBQ sauce, honey or molasses, apple cider vinegar and melted butter until smooth. This thins the sauce slightly and adds gloss and adhesion for the glaze.

Apply glaze and raise heat
When the chicken reaches about 150°F (66°C), brush a generous layer of the prepared glaze over the skin. Increase the smoker/grill temperature to 300–325°F (149–163°C) (or move the chicken to a hotter zone of the grill). Continue cooking and reapply glaze every 6–8 minutes to build up a sticky, caramelized coating.

Finish to safe temperature
Cook until the thickest part of the breast reaches 165°F (74°C) and the skin is glossy and caramelized, about 15–25 more minutes. If the glaze is charring too quickly, move the chicken further from direct heat or briefly reduce the temperature.
