Method

Prepare slider and assembly

    Warm and finish the meat

    If using pre-cooked mesquite-smoked brisket or chipotle pulled pork, reheat gently to serve warm. Heat a small nonstick or stainless pan over medium-low. Add 1/2 tsp neutral oil. Add 3 oz shredded brisket or pulled pork and warm, breaking up any large clumps, for 2–3 minutes until steaming. If the meat seems dry, add 1 tsp BBQ sauce while warming to moisten. Remove from heat and keep covered to retain heat.

    Toast the bun

    Split the mini slider bun horizontally. Spread 1/2 tsp softened butter evenly on cut sides. Heat a separate skillet over medium. Place buns cut-side down and toast 20–40 seconds until golden and slightly crisp. Watch carefully to avoid burning. Alternatively, toast under a broiler for 30–45 seconds.

    Season meat

    Taste a small piece of the warmed meat and season with a pinch of kosher salt and a pinch of freshly ground black pepper if needed. Toss lightly so seasoning distributes.

    Assemble the slider

    Place bottom half of the toasted bun on a plate. Pile the 3 oz of warm shredded brisket or pulled pork on the bun, mounding toward the center. Spoon or brush 1 tablespoon of extra BBQ sauce over the meat (serve additional sauce on the side if requested). Add 1 oz creamy coleslaw on top of the sauced meat, leaving edges clear so bun closes cleanly. Place 1 dill pickle slice on the slaw. Close with the top bun.

    Finish and serve

    If desired, secure slider with a small toothpick or decorative skewer. Serve immediately while warm with the remaining extra BBQ sauce on the side for dipping or drizzling.
