Prepare and toast
Preheat a skillet over medium heat or set a toaster to medium. Lightly brush both sides of the sourdough slices with 1 tsp extra-virgin olive oil. Toast the bread in the skillet 2–3 minutes per side until golden and crisp, or toast in a toaster until golden and edges are crisp. Remove and set on a cooling rack or plate.

Halve and scoop avocado
Cut the avocado in half lengthwise, remove the pit, and scoop the flesh into a medium bowl.

Add sprouts and carrots: Divide 1 cup sunflower sprouts between the two toasts, lightly pressing them into the avocado so they stay in place. Sprinkle about 1 tablespoon shredded carrots across both slices for color and crunch.

Finish & season: Drizzle the remaining 1 tsp extra-virgin olive oil over the two toasts and finish with a light pinch of Himalayan pink sea salt on each. If desired, add an extra crack of black pepper or a few drops of lemon juice to brighten.

Serve: Transfer to a plate and serve immediately to preserve the crunch of the toast and freshness of the sprouts.
