Italian seasoned roast beef sliced and dipped in a garlic au jus and piled into an italian roll. Served with hot or mild giardiniera pepper mix.

Prepare the Beef
In a large skillet, heat olive oil over medium-high heat. Season the beef roast with salt, black pepper, and Italian seasoning. Sear the beef on all sides until browned.

Slow Cook the Beef
Transfer the seared beef to a slow cooker. Add the minced garlic and beef broth. Cover and cook on low for 6 to 8 hours, or until the beef is tender and can be easily shredded.

Shred the Beef
Once cooked, remove the beef from the slow cooker and let it rest for a few minutes. Shred the beef using two forks.

Prepare the Au Jus
Strain the cooking liquid from the slow cooker into a saucepan to create the au jus. Heat over medium heat and adjust seasoning if necessary.

Assemble the Sandwich
Slice the Italian rolls in half. Pile the shredded beef onto the bottom half of each roll. Drizzle with hot au jus and top with giardiniera. Place the top half of the roll on and serve with extra au jus on the side.
