Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, but do not boil.

Melt the Chocolate
Remove the saucepan from heat and add the bittersweet chocolate, granulated sugar, cocoa powder, and salt. Stir until the chocolate is completely melted and the mixture is smooth.

Add Vanilla
Stir in the vanilla extract to the chocolate mixture.

Chill the Mixture
Let the mixture cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours or until completely chilled.

Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
