    Prepare the Ingredients

    Chop the green bell pepper, mushrooms, onion, and garlic. Set aside.

    Brown the Chicken

    In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and brown on both sides (about 5-7 minutes). Remove the chicken and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the green bell pepper and mushrooms, and cook for another 5 minutes.

    Add the Liquids

    Pour in the red wine, scraping up any brown bits from the bottom of the skillet. Allow it to simmer for about 3 minutes. Then add the crushed tomatoes and oregano.

    Simmer the Chicken

    Return the browned chicken breasts to the skillet. Cover and let it simmer on low heat for 25-30 minutes, until the chicken is cooked through and tender.

    Serve

    Garnish with fresh parsley and serve hot, ideally with pasta or crusty bread.
