Method
Making the Focaccia

Prepare the Dough
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare Baking Sheet
Grease a baking sheet with olive oil. Once the dough has risen, punch it down and spread it out onto the baking sheet.

Second Rise
Cover the dough again and let it rise for another 20-30 minutes.

Preheat Oven
Preheat your oven to 425°F (220°C).

Add Toppings
After the second rise, use your fingers to dimple the dough. Sprinkle shredded mozzarella cheese over the top, and if using, add fresh rosemary and coarse sea salt.

Bake
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and the focaccia is golden brown.

Cool and Serve
Remove from the oven, let it cool slightly, then cut into squares and serve warm.
