    Make the Pastry Shells

    In a mixing bowl, combine flour, sugar, salt, and butter. Mix until crumbly. Add the egg, wine, and mix until a dough forms. Wrap in plastic and chill for 30 minutes.

    Roll and Cut

    On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles (about 4-5 inches in diameter).

    Shape the Cannoli

    Wrap each dough circle around a cannoli tube, sealing the edges with a little water. Fry in hot oil until golden brown, then remove and drain on paper towels.

    Prepare the Filling

    In a bowl, mix ricotta cheese, confectioners' sugar, and vanilla extract until smooth. Fold in chocolate chips if using.

    Fill the Cannoli

    Once the shells are cool, carefully remove them from the tubes and use a pastry bag to fill with the ricotta mixture.

    Serve

    Dust the filled cannoli with confectioners' sugar before serving.
