Pastry Shell

Method

Pastry Shell and Filling

  1. 1

    Make the Pastry Shell

In a mixing bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg and wine/vinegar until dough forms. Knead on a floured surface until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

  2. 2

    Shape and Fry the Shells

Roll out the dough to 1/8 inch thick and cut into circles. Wrap each circle around a cannoli form and seal the edges with a little water. Heat oil in a deep fryer or heavy pot to 350°F (175°C) and fry the shells until golden brown. Drain on paper towels and cool.

  3. 3

    Prepare the Filling

In a bowl, combine ricotta cheese, powdered sugar, vanilla extract, and chocolate chips. Mix until smooth and creamy.

  4. 4

    Fill the Cannoli

Once the pastry shells are cool, carefully remove them from the forms. Fill each shell with the ricotta mixture using a piping bag or a spoon.

  5. 5

    Dip in Chocolate

Melt the chocolate chips in a microwave or double boiler. Dip the ends of each filled cannoli in the melted chocolate and place on parchment paper to set.

  6. 6

    Serve

Dust the filled and chocolate-dipped cannoli with powdered sugar before serving.
