Carefully clean the duck or goose liver by removing any veins or membranes. Rinse under cold water and pat dry with paper towels.

In a bowl, combine the port wine, cognac, salt, white pepper, and thyme. Add the cleaned liver and ensure it is well-coated. Cover and refrigerate for at least 12 hours, preferably 24 hours.

After marinating, remove the liver from the marinade and let it come to room temperature. Place the liver on a large piece of cling film. Roll it tightly into a log shape, twisting the ends to secure it.

Bring a pot of water to a gentle simmer. Place the wrapped liver into the water and poach for about 30 minutes. Ensure the internal temperature reaches 55°C (130°F) for medium rare.

Once poached, remove the torchon from the water and let it cool slightly. Refrigerate for at least 4 hours, or overnight before serving. Slice and serve with toasted bread and fruit compote.
