Prep vegetables
Wash all produce. Cut the eggplant into 1/2-inch (1.2 cm) cubes; to reduce bitterness and excess moisture, salt lightly (about 1/2 tsp) and place in a colander for 20 minutes, then rinse and pat dry. Trim ends from zucchini and cut into 1/2-inch rounds or half-moons depending on length. Core, seed and cut the bell peppers into 1/2-inch pieces. Peel and thinly slice the onion. Quarter the Roma tomatoes and coarsely chop; if tomatoes are very juicy, remove some seeds/pulp so mixture isn’t watery.
Mince garlic
Peel and finely mince 4 cloves garlic and set aside with fresh basil (chopped). Strip thyme leaves from stems and keep stems for the sauce base if desired.
Cooking base
Add the bell peppers and continue to cook, stirring occasionally, until peppers begin to soften, about 5 minutes.
Push vegetables to the side, add another tablespoon of olive oil, then add the eggplant cubes in a single layer (work in batches if needed to avoid steaming). Cook without moving for 3–4 minutes until bottoms brown, then stir and cook until mostly tender, another 3–4 minutes.
Sauce & simmer
Stir in tomato paste and cook 1 minute to deepen flavor. Add chopped tomatoes, thyme sprigs, dried oregano, and the reserved thyme stems if using. Pour in the stock and red wine vinegar, scrape any browned bits from the bottom of the pan, and bring to a gentle simmer.
Reduce heat to low, partially cover, and simmer gently 20–25 minutes, stirring occasionally, until vegetables are tender and flavors meld. If mixture looks too dry, add up to an additional 1/4 cup stock or water.
Season with remaining kosher salt (total 1.5 tsp) and freshly ground black pepper to taste; add crushed red pepper flakes if using. Remove and discard thyme sprigs/stems.
Finish & serve
Stir in remaining tablespoon of olive oil and chopped fresh basil. Taste and adjust seasoning (salt, pepper, a splash of vinegar if it needs brightness). If using, sprinkle grated pecorino or parmesan and gently fold through.
Transfer to a shallow serving dish so the ratatouille cools slightly and the rustic texture shows. Garnish with fresh basil leaves. Serve warm or at room temperature with crusty bread, polenta, rice, or alongside grilled proteins.
