Syrup Base
Combine the granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until the sugar is fully dissolved.
Bring to a gentle simmer and let simmer 3–5 minutes to make a light simple syrup. Remove from heat.
Stir in the caramel color until fully incorporated. If using homemade caramel, add 2 tablespoons and whisk to combine. Set syrup aside to cool to room temperature.
Flavor Concentrate
In a small bowl or jar, combine the lemon juice, lime juice, vanilla extract, orange zest, and lime zest (or oils) and stir.
Add the thinly sliced galangal or ginger to the mixture to give a sharp, spicy undertone. If using powdered or concentrated flavors (like orange oil or lime oil) add them sparingly — 1/8–1/4 teaspoon if using oil instead of zest, reduce other citrus accordingly.
Let the flavor concentrate steep for 30 minutes at room temperature to meld flavors. Strain the concentrate through a fine mesh sieve or cheesecloth into the cooled syrup base to remove solids and zests, pressing gently to extract flavor. Discard solids.
Taste the combined syrup and adjust: for brighter citrus add up to 1 teaspoon more lemon or lime juice; for more spice add an extra pinch of cinnamon or nutmeg; for deeper color add another 1/2–1 tablespoon of caramel color if desired.
Carbonation & Finishing
Chill the flavored syrup thoroughly in the refrigerator (at least 1 hour) so that it is cold before mixing with carbonated water.
To serve, fill a tall glass with ice. For each 1 cup (240 ml) of cold carbonated water, add 2 tablespoons of the flavored syrup (adjust to taste — some prefer 1.5–3 tbs). This recipe uses approximately 4 cups carbonated water to 1 cup syrup yield (adjust proportions when scaling).
Gently stir once to combine, being careful not to over-stir and lose carbonation.
Garnish with a lime or lemon wedge and serve immediately chilled.
