Brined Olives
Quick brine (optional, for extra juiciness and to remove factory brine)
If olives taste very salty from their jar, quick-brine them. In a medium bowl, dissolve 1 tablespoon coarse sea salt into 2 cups warm filtered water. Add 3 cups olives and stir. Let sit 20–30 minutes, tasting after 20 minutes. When they reach desired salt level, drain and rinse under cold running water. Pat dry with paper towels. If olives are already mild, skip this step.
Transfer drained, dried olives to a medium mixing bowl to prepare the marinade.
Marinade & Aromatics
Warm the olive oil gently: place 1/2 cup extra-virgin olive oil in a small saucepan over very low heat for 1–2 minutes until fragrant but not smoking. Alternatively, microwave for 20–30 seconds. Warming helps release aromatics into the oil.
Add aromatics to the oil: remove from heat and stir in 2 thinly sliced garlic cloves, 1 tablespoon fresh lemon zest, 1 tablespoon fresh lemon juice, 2 rosemary sprigs (or 1 tablespoon chopped), 2 thyme sprigs, 1/4 teaspoon crushed red pepper flakes, 1/2 teaspoon smoked paprika, 1/2 teaspoon whole black peppercorns, and optional 1/2 tablespoon orange zest. Let the mixture steep 5 minutes so flavors infuse.
Combine oil and olives: pour the warm aromatic oil over the bowl of 3 cups prepared olives. Stir thoroughly so olives are evenly coated and aromatics distributed.
Marinate: cover the bowl with plastic wrap or transfer olives and marinade to an airtight container or jar. Let marinate at room temperature for at least 2 hours. For deeper flavor, refrigerate and marinate for 24–48 hours, turning or shaking the jar once or twice to redistribute oil and aromatics. Bring to room temperature before serving if chilled (about 30 minutes).
Finish & Garnish
Taste and adjust seasoning: after marinating, taste 1–2 olives. If needed, sprinkle a pinch of flaky sea salt to enhance flavor. Do not over-salt—oils and brine provide background saltiness.
Serve: transfer olives to a serving bowl. Spoon a little of the infused oil over them, scatter the garlic slices and herbs from the marinade on top, and finish with 1 tablespoon chopped fresh parsley if using.
Storage: store leftover olives submerged in the oil and aromatics in an airtight jar in the refrigerator for up to 2 weeks. Bring to room temperature before serving. Discard any olives if oil smells off or herbs look spoiled.
