Method
Sandwich Options (RB / HMSW / BLT)

Prepare bacon (for BLT)
Preheat oven to 400°F (200°C). Arrange bacon strips on a baking sheet lined with foil and a rack if available. Bake 12–18 minutes until crisp. Transfer to paper towels to drain. (Alternatively, pan-fry over medium heat 8–10 minutes, turning occasionally.)

Prepare chicken for HMSW
If using leftover or pre-cooked chicken, shred or slice into strips. For quick cooking: season 8 oz chicken breast with 1/4 tsp salt and 1/8 tsp pepper, cook in 1 tsp olive oil in a skillet over medium heat 5–7 minutes per side until internal temp 165°F, then slice. Toss warm chicken with honey mustard dressing: combine 2 tsp mayonnaise, 2 tsp honey, 1 tsp Dijon mustard, and 1/8 tsp garlic powder; mix with chicken until coated.

Assemble Roast Beef (RB)
Lightly toast 2 slices of bread per sandwich (butter if desired). Spread 1 tsp mayonnaise and 1/2 tsp Dijon mustard on one slice. Layer 3–4 oz sliced roast beef, 1 cheese slice, 2 lettuce leaves, 2–3 tomato slices, and pickles. Top with other slice of bread, cut in half.

Assemble Honey Mustard Chicken Wrap (HMSW)
Warm one flour tortilla in a dry skillet 15–20 seconds per side or microwave 10 seconds. Place 4 oz prepared honey-mustard chicken in center, top with 1–2 lettuce leaves, 2–3 tomato slices, 1–2 tbsp thinly sliced red onion, and 1 cheese slice (optional). Fold sides and roll tightly, seam side down. Cut in half on the diagonal.

Assemble BLT
Lightly toast 2 slices of bread per sandwich and spread 1 tsp mayonnaise on one slice. Layer 3 slices of cooked bacon, 2 lettuce leaves, and 2–3 tomato slices. Season tomatoes with a pinch of salt and pepper. Top with other bread slice and cut in half.

Finish and serve sandwiches
If desired, secure sandwiches/wrap halves with a toothpick. Serve immediately with chosen soup or salad. Leftover meats and condiments can be held refrigerated up to 2 days.
Tomato Soup

Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add 1/2 cup diced onion and sauté until translucent, 4–5 minutes. Add 2 minced garlic cloves and cook 30 seconds until fragrant.

Pour in 28 oz crushed tomatoes and 2 cups vegetable or chicken stock. Stir in 1/2 tsp dried basil, 1/2 tsp sugar (optional), 3/4 tsp salt, and 1/4 tsp black pepper. Bring to a gentle simmer, then reduce heat and simmer 10–12 minutes to meld flavors.

Use an immersion blender to puree until smooth, or transfer carefully in batches to a blender and puree, then return to pot. Stir in 1/4 cup heavy cream or half-and-half and warm through (2–3 minutes) without boiling. Taste and adjust seasoning.

Ladle into bowls and garnish with a small drizzle of cream or fresh basil if desired. Serve hot alongside the chosen sandwich.
Mixed Greens Salad

In a large bowl combine 4 cups mixed salad greens, 1/2 cup sliced cucumber, 1/2 cup halved cherry tomatoes, and 2 tbsp thinly sliced red onion.

In a small bowl whisk 2 tbsp olive oil with 1 tbsp red wine vinegar (or lemon juice), 1/4 tsp salt, and 1/4 tsp black pepper. Taste and adjust acidity or seasoning.

Drizzle dressing over salad just before serving and toss gently to coat. Serve chilled alongside the chosen sandwich.
