Horseradish Aioli

In a small bowl, combine 1/2 cup mayonnaise, 2 tsp prepared horseradish, 1 tsp lemon juice, 1/2 tsp Dijon mustard and 1/2 tsp minced garlic.

Whisk until smooth. If the aioli seems too thick, whisk in up to 1 tsp hot water, a little at a time, until spreadable.

Season to taste with 1/4 tsp salt and 1/4 tsp black pepper. Cover and chill while preparing the rest of the sandwich to allow flavors to marry (at least 10 minutes).

Toast ciabatta
Place the ciabatta cut-side down on the hot pan or in the toaster oven and toast until golden and crisp, about 2–3 minutes. Remove and set aside.

Slice tomatoes
Thinly slice the 2 roma tomatoes into 1/4-inch slices. Lightly season the tomato slices with the remaining pinch of kosher salt and a few grinds of black pepper.

Assemble and melt
Lay the bottom halves of the toasted ciabatta on the work surface. Spread about 1 heaping tablespoon of horseradish aioli over each bottom half (use remaining aioli on the top halves at service if desired). Divide the roast beef evenly (about 5 oz per sandwich) and place it atop the aioli on each bottom half, arranging slices to cover the bread.

Add cheese and melt
Tear or slice the 6 oz cheddar into even pieces and distribute over the roast beef (about 3 oz per sandwich). Return the open-faced sandwiches to the warm grill pan or under a broiler for 1–2 minutes, watching closely, until the cheddar is melted and just beginning to bubble. Alternatively, close with the top halves and press in a sandwich press until cheese melts, about 1–2 minutes.

Finish assembly
Top the melted cheese with a generous handful (about 1 cup mixed greens per sandwich) of mixed greens, then add 3–4 slices of seasoned roma tomato. Spread a thin layer (about 1/2 tbsp) of remaining horseradish aioli on each top ciabatta half and place on top of the sandwich.

Serve
Cut each sandwich in half on the diagonal and serve immediately while warm. If desired, serve extra horseradish aioli on the side.
