    Prepare the vegetables and peppers

    Slice the onion and green pepper thinly. Slice the pepperoncini peppers into rings or half-rings, draining any excess juice from the jar. Set aside.

    Cook the sausage and vegetables

    Heat a medium skillet over medium-high heat and add 1 tablespoon olive oil. Add the crumbled sausage and break it up with a spatula. After 3–4 minutes when the sausage starts to brown, add the sliced onion and green pepper. Season with 1/4 tsp salt, 1/8 tsp black pepper and 1/4 tsp dried oregano. Continue to cook, stirring occasionally, until the sausage is fully cooked and vegetables are softened and slightly caramelized, about 6–8 more minutes.

    Optional finish (saucy variant)

    If you prefer a slightly saucier grinder like some restaurants use, add 2 tablespoons crushed tomatoes or light tomato sauce to the skillet, stir to combine, and simmer for 1–2 minutes to marry flavors and remove excess raw tomato taste. Taste and adjust seasoning.

    Toast the roll

    Split the 9-inch hoagie roll lengthwise but not completely through. If desired, spread 1 teaspoon softened butter on the cut sides. Place the roll cut-side down on a preheated skillet or under a broiler for 1–2 minutes until lightly toasted and golden. Remove carefully.

    Assemble the grinder

    Spoon the hot sausage, onion and pepper mixture evenly down the center of the toasted hoagie roll. Distribute the sliced pepperoncini peppers over the meat mixture. Top with 3 ounces of shredded or sliced fresh mozzarella, covering the hot filling so it softens and slightly melts.

    Add Diana sauce and finish

    Drizzle or spread 1 1/2 tablespoons of Diana sauce across the top interior of the roll (opposite side from the filling) or directly over the cheese. Close the sandwich and press gently. Optionally, place the assembled sandwich briefly under a broiler (30–60 seconds) or in a 350°F/175°C oven for 2–3 minutes to finish melting the cheese and warm the sauce—watch closely to avoid burning.

    Serve

    Remove the sandwich from heat, slice in half if desired, and serve immediately. Provide extra pepperoncini or Diana sauce on the side if guests want more heat or creaminess.
