Cook pasta
Bring a large pot of salted water to a rolling boil. Add the fettuccine and cook according to package instructions (usually 8–10 minutes) until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Add milk and cream
Slowly whisk in the whole milk and heavy cream so the mixture is smooth. Continue to cook and whisk over medium heat until the sauce begins to thicken and lightly bubbles, about 4–6 minutes.

Finish Alfredo sauce
Reduce heat to low and whisk in the grated Parmesan a little at a time until melted and smooth. Season with 1 tsp salt, 1/2 tsp black pepper, and 1/8 tsp nutmeg. If the sauce becomes too thick, whisk in reserved pasta water 1–2 tablespoons at a time to reach a smooth, creamy consistency suitable for kids (aim for a slightly looser sauce). Keep warm on the lowest heat, stirring occasionally.

Prepare chicken
Pat the chicken breasts dry. If they are thick, slice each breast horizontally to make 2 thinner cutlets or pound gently to an even 1/2-inch thickness for quick, even cooking. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper.

Cook chicken
Heat 1 tbsp olive oil in a separate skillet over medium-high heat. Add the chicken and cook undisturbed 3–4 minutes per side (depending on thickness) until golden brown and cooked through (internal temperature 165°F / 74°C). Transfer to a cutting board and let rest 3 minutes, then slice into bite-sized strips or cubes suited for kids.

Optional: shred or chop for kids
For younger children, shred the cooked chicken with two forks or finely chop so it is easy to eat.

Add chicken and optional cheese
Fold in the sliced or shredded chicken gently. If using, sprinkle the 1/2 cup shredded mozzarella over the pasta and cover the pan for 1–2 minutes off heat to melt the cheese for a kid-friendly gooey finish.

Serve
Divide the pasta among plates for kids. Top each portion with a little extra grated Parmesan (about 1 tbsp per serving) and a pinch of chopped parsley if desired. Let cool slightly before serving to children.
