Roll in the breadcrumb mixture to coat evenly. Place coated sticks on a parchment-lined tray and repeat with remaining sticks. Once all are coated, put the tray in the freezer for 20-30 minutes to firm the coating and further reduce melt-through during frying.

Pour about 1 cup vegetable oil into a heavy skillet to reach roughly 1/2-inch depth. Heat over medium heat until the oil reaches 350°F (175°C) or until a small breadcrumb sizzles and browns in about 20–30 seconds. If you don't have a thermometer, maintain medium heat and watch closely so it doesn't smoke.
