    Prep chicken

    Pat the chicken tenders dry with paper towels. If pieces are thicker than 1/2 inch, butterfly or gently pound to an even 1/2-inch thickness so they cook evenly. Season both sides lightly with 1/2 tsp of the salt and a pinch of pepper.

    Make dry mix

    In a shallow bowl combine the flour (3 tbs), cornstarch (1 tbs), 1/2 tsp salt, 1/2 tsp black pepper, paprika (1 tsp), and garlic powder (1 tsp). Whisk to distribute spices evenly.

    Make wet mix

    In a second shallow bowl beat the egg with the milk (3 tbs) until smooth.

    Prep crumb mix

    Place the fine breadcrumbs (1 cup) in a third shallow bowl or plate. If using panko and you want finer crumbs for kids, pulse briefly in a food processor or crush with a rolling pin.

    Breading sequence

    Working with one tender at a time: dredge the chicken first in the seasoned flour mixture, shaking off excess; dip into the egg-milk mixture allowing excess to drip back into the bowl; then press into the breadcrumbs until well coated. Place breaded tenders on a wire rack or plate. Repeat for all tenders (should yield approximately 6–8 small tenders; recipe portion is for 3 served).

    Rest before frying

    Let the breaded tenders rest on the rack for 5–10 minutes. This helps the coating adhere and reduces falling-off crumbs during frying.

    Heat oil

    Pour about 1 cup vegetable oil into a large skillet to create a shallow layer about 1/4–1/2 inch deep. Heat over medium heat until the oil reaches 350°F (175°C) or a small breadcrumb sizzles and browns in about 30 seconds. If you don't have a thermometer, test with a small piece of bread or breadcrumb — it should sizzle steadily but not smoke.

    Fry tenders

    Carefully place 2–3 breaded tenders in the hot oil without crowding (work in batches if needed). Cook 2–3 minutes per side, turning once, until coating is golden brown and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Adjust heat as needed so the exterior browns without burning before the inside cooks.

    Drain

    Transfer cooked tenders to a wire rack set over a baking sheet or to a plate lined with paper towels to drain. Season lightly with a pinch of salt while hot. Repeat with remaining tenders.

    Keep warm (optional)

    If cooking in batches and you want to serve all warm at once, place finished tenders on a baking sheet in a single layer in a 200°F (95°C) oven until ready to serve (no more than 10–15 minutes).
