Prepare the Soup

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add Aromatics

Add minced garlic, grated ginger, and diced carrot. Sauté for another 3-4 minutes until fragrant.

Combine Ingredients

Stir in the diced bell pepper, canned tomatoes, vegetable broth, cayenne pepper, salt, and black pepper. Bring to a simmer.

Incorporate Peanut Butter

Once the soup is simmering, stir in the peanut butter until well combined. Allow to simmer for about 15-20 minutes.

Add Kale

In the last 5 minutes of cooking, add the torn kale to the soup and stir until wilted.

Stir in the lemon juice and roasted red pepper before serving. Adjust seasoning if necessary.
