Prepare the Chayote Squash

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chayote squash, cumin, salt, and pepper. Cook until tender, about 5-7 minutes.

Cook the Black Beans

In a separate pot, heat the black beans over medium heat until warmed through. Add salt and pepper to taste.

Assemble the Chilaquiles

In a large serving dish, layer the corn tortilla chips, smoked mushrooms, chayote squash, black beans, and salsa verde.

Prepare the Quail Eggs

In a small pot, bring water to a boil. Carefully add the quail eggs and boil for 3 minutes. Remove and place in cold water to stop cooking. Once cool, peel the eggs.

Garnish and Serve

Top the chilaquiles with sliced avocado, crumbled queso fresco, and halved quail eggs. Serve immediately.
