Preheat your oven to 400°F (200°C). Cut the winter squash in half, scoop out the seeds, and place them cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for about 40-50 minutes, or until tender.

Sauté the Aromatics

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for about 5-7 minutes until soft. Add the minced garlic and sauté for an additional minute.

Blend the Soup

Once the squash is done roasting, scoop the flesh out and add it to the pot with the onions and garlic. Pour in the vegetable broth and bring to a simmer. Use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches.

Add Cream and Seasoning

Stir in the heavy cream, grated nutmeg, and adjust seasoning with more salt and pepper if needed. Let the bisque simmer for another 5-10 minutes.

Prepare Brown Butter Crumbles

In a small skillet, melt 4 tablespoons of butter over medium heat until it turns golden brown. Remove from heat and add breadcrumbs (1/2 cup) to coat, and set aside.
