Cooking Instructions
1. Prepare the Sticky Rice
Start by cooking the sticky rice according to the package instructions. Set aside once cooked.
2. Cook the Potatoes
In a pot, boil diced potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.
3. Prepare the Bok Choy
In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add bok choy and stir-fry for about 3-4 minutes until tender. Season with salt and pepper to taste. Set aside.
4. Make the Curry Sauce
In the same skillet, add another tablespoon of vegetable oil, and add the Massaman curry paste. Cook for 1-2 minutes until fragrant. Slowly whisk in coconut milk and bring to a simmer.
5. Cook the Scallops
Add scallops to the simmering curry sauce and cook for about 3-4 minutes until they are opaque and cooked through.
