Preparation and Assembly
Prepare the Charred Pineapple Mignonette
In a skillet over medium-high heat, add the diced pineapple and char until caramelized, about 5 minutes. Remove from heat and let cool.
In a bowl, combine the charred pineapple, red wine vinegar, shallots, crushed pink peppercorns, salt, and black pepper. Mix well and let it sit for at least 15 minutes to allow the flavors to meld.
Shuck the Oysters
Carefully shuck the fresh oysters, discarding the top shells. Arrange the oysters on a bed of crushed ice on a serving platter.
Serve
Spoon a small amount of the charred pineapple mignonette over each oyster. Serve immediately with lime wedges on the side.
