Prepare Grilled Lemon Gelee

In a small pot, combine lemon juice and water. Soak gelatin sheets in cold water for about 5 minutes until softened, then add to the pot. Heat gently until gelatin is dissolved. Pour into a shallow dish and chill until set (about 2-3 hours). Once set, cut into cubes.

Make Pickled Celery

In a small saucepan, combine white vinegar, sugar, salt, and 1 cup of water. Bring to a boil, stirring until sugar is dissolved. Remove from heat and add sliced celery. Let cool, then refrigerate for at least 1 hour before serving.

Prepare Oysters

Shuck the oysters carefully, keeping them on the half shell. Arrange on a serving platter.

Serve

Top each oyster with a few drops of hot sauce, a cube of grilled lemon gelee, and a piece of pickled celery. Enjoy fresh!
