Preparation

Marinate the Short Ribs

In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and chopped green onions. Add the beef short ribs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best results.

Sear the Ribs

Preheat your oven to 300°F (150°C). Heat a large oven-safe pot or Dutch oven over medium-high heat. Remove the ribs from the marinade (reserve the marinade) and sear them in the pot until browned on all sides, about 4-5 minutes per side.

Braise the Ribs

Once the ribs are seared, add the reserved marinade and water to the pot. Bring to a simmer, then cover and transfer to the preheated oven. Braise for 2.5 to 3 hours until the ribs are tender.

Prepare Sticky Rice

While the ribs are braising, prepare sticky rice according to package instructions.

Prepare Turnip Kimchi and Broccoli

Serve the braised ribs over sticky rice alongside turnip kimchi and sesame roasted broccoli. For the broccoli, toss florets with sesame oil and roast in the oven until crispy.

Plate the sticky rice, top with the braised short ribs, and garnish with mung bean sprouts and additional chopped green onions if desired.
