Preparation and Assembly
Prepare the Tartlet Shells
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets and cut them into circles that fit your tartlet molds. Place the pastry in the molds and prick the bottoms with a fork. Bake for 15-20 minutes or until golden brown. Let cool.
Make the Balsamic Strawberries Preserve
In a medium bowl, mix fresh strawberries and balsamic vinegar. Let sit for about 15 minutes to macerate.
Prepare the Champagne Macerated Strawberries
In a separate bowl, combine additional sliced strawberries with champagne and let them soak for 15-20 minutes.
Assemble the Tartlets
Once the tartlet shells are cool, layer them with a slice of Brie cheese, then spoon the balsamic strawberries preserve on top.
Prepare the Candied Pistachios
In a small saucepan over medium heat, combine 1 cup of pistachios with 2 tablespoons of sugar and a splash of water. Stir until the sugar dissolves and coats the pistachios. Transfer to parchment paper to cool.
Serve
Place a bed of bib lettuce on each plate, top with the assembled tartlet, scatter candied pistachios around, and garnish with champagne macerated strawberries.
