Prepare the Black-Eyed Peas

Soak the black-eyed peas in water overnight or for at least 6 hours. Drain and rinse before using.

Cook the Ham

In a large pot, heat olive oil over medium heat. Add the diced country ham and cook until crispy, about 5 minutes. Remove and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Combine Ingredients

Add the soaked black-eyed peas, collard greens, vegetable broth, salt, black pepper, and red pepper flakes to the pot. Bring to a boil.

Simmer the Soup

Reduce heat and let the soup simmer for about 30-40 minutes, or until the peas are tender.

Stir in the crispy country ham and lemon juice. Adjust seasoning if necessary. Serve hot.
