Prepare Base Mix

Heat milk and cream

Combine 2 cups whole milk and 1 cup heavy cream in a medium saucepan over medium heat. Warm gently until steam begins to rise and small bubbles form at the edges (do not boil).

Whisk yolks and sugar

While the milk warms, whisk together 2 egg yolks and 3/4 cup granulated sugar in a heatproof bowl until pale and slightly thickened (about 1–2 minutes). If using milk powder, whisk it into the yolk mixture now.

Temper yolks

Slowly ladle about 1/3 cup of the hot milk mixture into the yolk-sugar bowl while whisking constantly to temper. Repeat with another 1/3 cup. Then pour the tempered yolk mixture back into the saucepan with the remaining milk, stirring constantly.

Cook custard

Cook the combined mixture over medium-low heat, stirring constantly with a wooden spoon or silicone spatula, until it thickens slightly and coats the back of the spoon (temperature about 170–175°F / 77–80°C). Do not let it boil.

Finish base

Remove from heat. Stir in 2 tsp vanilla extract and a pinch (1/8 tsp) of salt. If using the optional cornstarch slurry for extra body, mix 1 tsp cornstarch with 1 tbsp cold water until smooth and whisk it into the hot custard now; return to very low heat for 30–60 seconds while stirring until slightly thicker, then remove from heat.

Chill

Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Cover the surface with plastic wrap (touching the custard) and refrigerate until fully cold, at least 4 hours or overnight. Cold base freezes and aerates more reliably in the machine.

Make chocolate sauce

For chocolate or swirl: whisk 1/4 cup unsweetened cocoa powder with 3 tbsp hot water until smooth. Add 1/4 cup granulated sugar and 1 tbsp butter. Warm gently in a small saucepan over low heat, stirring until sugar dissolves and butter melts. Remove from heat and stir in 1/2 tsp vanilla and a pinch (1/16 tsp) of salt. Cool to room temperature, then refrigerate until cold and slightly thickened.

Optional chocolate base

To make full chocolate soft serve instead of swirl, whisk 2–3 tbsp of the cooled chocolate sauce into a cup of the chilled custard base until evenly chocolate-colored. Taste and adjust—add more sauce for a darker chocolate flavor—then chill again briefly before freezing in the machine.

Churning and Serving

Prepare machine

Ensure your soft-serve or ice cream machine’s bowl or freezer component is properly frozen according to manufacturer instructions, or your countertop soft-serve machine is prepped and chilled.

Churn vanilla or chocolate

Pour the chilled vanilla custard base into the machine and churn according to manufacturer directions until it reaches a soft-serve consistency (usually 10–20 minutes). For chocolate soft serve, churn the chocolate-mixed base instead.

Create swirl

For a swirl: simultaneously or sequentially dispense vanilla and chocolate into the serving cone or cup. If your machine only churns one flavor at a time, partially dispense a scoop of vanilla, then add a ribbon of chilled chocolate sauce and top with more vanilla while using a spoon to create a gentle swirl. Alternatively, use a two-hopper machine and set one hopper to vanilla and the other to chocolate.

Hardening (optional)

If you prefer a firmer texture, place dispensed soft serve briefly into the freezer for 5–10 minutes to set slightly. Don’t freeze too long or it will harden beyond soft-serve texture.

Serve

Top with sprinkles, nuts, or place in a cone. Serve immediately for classic soft-serve texture.
