    Prepare the Ingredients

    Chop the leeks, dice the potatoes, and slice the bacon into small pieces.

    Cook the Bacon

    In a large pot, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Sauté the Leeks

    In the same pot with the bacon drippings, add the chopped leeks and sauté for about 5 minutes until they become soft and translucent.

    Add Potatoes and Broth

    Add the diced potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes until the potatoes are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

    Add Cream and Seasoning

    Stir in the heavy cream, salt, and black pepper. Adjust seasoning to taste.

    Ladle the soup into bowls, top with crispy bacon and fresh chives, and serve warm.
