Chop the Vegetables
Dice the tomatoes, slice the mushrooms, chop the red bell pepper, and finely chop the onion. Set aside.

Mix Seasoning
In a small bowl, combine salt, black pepper, cumin, and chili powder.
Cooking

Sauté the Vegetables
Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the chopped onions and sauté for 2 minutes until translucent.

Add Remaining Vegetables
Add the diced tomatoes, sliced mushrooms, and chopped red bell pepper to the pan. Sprinkle the mixed seasoning over the vegetables and sauté for an additional 5-7 minutes until softened. Remove from heat and let cool slightly.

Assemble the Quesadillas
Place one tortilla in the same frying pan. Sprinkle 1/4 cup of shredded cheese over half of the tortilla, followed by 1/4 of the sautéed vegetable mixture. Fold the tortilla in half.

Cook the Quesadilla
Add another tablespoon of olive oil to the pan. Cook the folded quesadilla for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas and filling.

Slice and Serve
Cut each quesadilla into wedges and serve warm. Enjoy with your favorite salsa or guacamole on the side.
