    Season the Steak

    Generously season each ribeye steak with salt and black pepper on both sides. Allow it to rest at room temperature for about 30 minutes.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes before slicing.

Fries

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips to make fries. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat them dry with paper towels. Fry the potatoes in batches until golden and crispy, about 4-5 minutes. Remove and place on paper towels to drain excess oil. Sprinkle with salt while hot.

Chimichurri

    Make the Chimichurri

    In a food processor, combine fresh parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Pulse until the mixture is well blended but still slightly chunky. Adjust salt to taste.
