Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dough Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

    Shape the Pretzel Crust

    Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a long rope and then shape into a pretzel or pizza round.

    Boil Pretzels

    In a large pot, bring 10 cups of water to a boil and add 2/3 cup of baking soda. Boil each pretzel for about 30 seconds on each side, then remove and place on the prepared baking sheet.

    Add Toppings

    Brush each pretzel with olive oil. Spread pizza sauce over the top, sprinkle with mozzarella cheese, and add pepperoni slices if desired.

    Bake

    Sprinkle with coarse sea salt and bake in the preheated oven for about 12-15 minutes or until golden brown.

    Cool and Serve

    Remove from the oven and let cool slightly before slicing. Serve warm.
