Pretzel Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let sit for about 5-10 minutes until foamy.

    Mix Ingredients

    In a large mixing bowl, combine flour and salt. Pour in the activated yeast mixture and stir until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat your oven to 450°F (232°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope, then twist into a pretzel shape.

    Boil Pretzels

    In a large pot, bring water and baking soda to a boil. Boil each pretzel for about 30 seconds on each side, then remove and place on a parchment-lined baking sheet.

    Add Salt

    Sprinkle coarse sea salt over the boiled pretzels.

    Bake

    Bake in the preheated oven for 12-15 minutes or until golden brown.

Cheese Sauce Preparation

    Make Roux

    In a saucepan over medium heat, melt the butter. Stir in flour and cook for about 1 minute until bubbly.

    Add Milk

    Gradually whisk in the milk until smooth. Continue cooking, stirring constantly until the mixture thickens.

    Add Cheese

    Remove from heat and stir in the cheddar cheese until melted and smooth. Season with salt, pepper, and optional hot sauce.
