Pretzel Dough

Baking Solution

Method

Pretzel Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dough

In a large mixing bowl, combine the all-purpose flour and salt. Add the melted butter and the activated yeast mixture. Mix until a dough forms.

  3. 3

    Knead Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Let Dough Rise

Place the kneaded dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Baking

  1. 5

    Preheat Oven

Preheat your oven to 450°F (230°C).

  2. 6

    Shape Pretzel Bites

Once the dough has risen, punch it down and turn it out onto a clean surface. Divide it into small pieces (about 1-inch each) and roll into balls.

  3. 7

    Prepare Baking Solution

In a large pot, bring the 10 cups of water to a boil. Add the baking soda carefully to the boiling water.

  4. 8

    Boil Pretzel Bites

Boil the pretzel bites in batches for about 30 seconds each, then remove them with a slotted spoon and place on a parchment-lined baking sheet.

  5. 9

    Bake

Bake the pretzel bites in the preheated oven for about 12-15 minutes or until golden brown. Remove and let cool slightly.

Cheese Sauce Preparation

  1. 10

    Melt Butter

In a saucepan over medium heat, melt the butter.

  2. 11

    Create Roux

Add the flour to the melted butter and whisk constantly for about 1 minute until it turns golden.

  3. 12

    Add Milk

Slowly whisk in the milk until smooth, continuing to whisk until the mixture thickens.

  4. 13

    Add Cheese and Seasonings

Remove from heat and stir in the cheddar cheese, salt, pepper, and garlic powder until completely melted and smooth.
