Prepare the Filling
In a large mixing bowl, combine the ground pork, grated ginger, minced garlic, chopped green onions, soy sauce, sesame oil, salt, and ground black pepper. Mix well until all ingredients are thoroughly incorporated.

Assemble the Dumplings
Place a dumpling wrapper on a flat surface. Spoon about 1 tablespoon of the pork filling into the center of the wrapper. Moisten the edges of the wrapper with a little water, then fold it in half over the filling to create a half-moon shape. Press the edges firmly to seal. Repeat this process until all the filling is used.

Steam the Dumplings
Fill a steamer pot with water and bring it to a boil. Place the dumplings in the steamer basket, making sure they do not touch each other. Cover and steam for about 15-20 minutes or until the pork is cooked through.

Mix the Sauce
In a small bowl, combine the soy sauce, rice vinegar, chili oil, and toasted sesame seeds. Stir well to combine.
