Method
Preparing the Pork Belly

Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Cut the pork belly into bite-sized cubes, about 1-inch in size.

Season the Pork Belly
In a large bowl, combine the salt, black pepper, and garlic powder. Add the cubed pork belly and toss until evenly coated in the seasoning.

Roast the Pork Belly
Place the seasoned pork belly cubes on a baking sheet lined with parchment paper. Drizzle olive oil over the top. Roast in the preheated oven for 2 hours, or until the pork is tender and the fat has rendered.

Crisp the Pork Belly
Increase the oven temperature to 450°F (230°C). Continue to roast for an additional 20-30 minutes, or until the pork belly bites are crispy and golden brown. Remove from the oven and let them rest.
Making the Honey Sriracha Sauce

Combine Ingredients
In a small saucepan, combine the honey, sriracha sauce, soy sauce, rice vinegar, and minced garlic.

Cook the Sauce
Heat the mixture over medium heat. Stir occasionally and bring to a simmer. Allow it to simmer for 5-7 minutes until slightly thickened.

Finish the Sauce
Remove the saucepan from heat and let the sauce cool slightly. Adjust seasoning if necessary.

Arrange the crispy pork belly bites on a serving platter and drizzle with the honey sriracha sauce. Serve immediately while hot.
