Chips Preparation

Make the Dough
In a large mixing bowl, combine the spent grain, all-purpose flour, cornstarch, and salt. Mix well. Gradually add water to form a dough.

Knead and Roll
Knead the dough for about 5 minutes until smooth. Roll out the dough to about 1/8 inch thickness on a floured surface.

Cut and Fry
Cut the rolled dough into chip-sized pieces. Heat oil in a deep frying pan over medium heat. Fry the chips in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Assemble Nachos
Preheat your oven to 350°F (175°C). Arrange the fried chips on a baking sheet. Evenly sprinkle shredded cheddar cheese and sliced jalapenos over the chips.

Melt the Cheese
Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a minute. Serve hot with sweet and spicy mustard, sour cream, and salsa on the side.
