Pretzel Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large mixing bowl, combine spent grain, all-purpose flour, and salt. Pour in the activated yeast mixture and mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead it for about 5-7 minutes, until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Shaping and Baking Pretzels

    Shape Pretzels

    Preheat your oven to 450°F (232°C). After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully place each pretzel into the boiling water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Egg Wash

    Beat the egg in a small bowl and brush the egg wash over the pretzels.

    Bake

    Sprinkle coarse salt over the pretzels and bake in the preheated oven for 12-15 minutes or until they are golden brown.

Beer Cheese Sauce Preparation

    Combine Ingredients

    In a medium saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, beer, garlic powder, and mustard powder.

    Melt and Stir

    Stir continuously until the cheeses are melted and the sauce is smooth. Season with salt and black pepper to taste.

    Remove from heat and serve warm alongside the pretzels.
