Fish Preparation

    Marinate the Fish

    In a medium bowl, combine the olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the white fish fillets and coat them in the marinade. Cover and refrigerate for at least 30 minutes.

    Grill the Fish

    Preheat a grill or grill pan over medium-high heat. Remove the fish from the marinade and grill for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from the grill and let it rest.

Cabbage Slaw Preparation

    Mix the Slaw

    In a large bowl, combine the shredded cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine. Allow the slaw to sit for at least 10 minutes for the flavors to meld.

Chipotle Sauce Preparation

    Prepare the Sauce

    In a small bowl, mix together the Greek yogurt (or sour cream), chopped chipotle peppers, lime juice, minced garlic, and salt. Stir until well combined. Adjust seasoning to taste.

Assembling the Tacos

    Warm the Tortillas

    Warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

    Assemble the Tacos

    To assemble each taco, place a piece of grilled fish on a tortilla, top with a generous amount of cabbage slaw, and drizzle with chipotle sauce. Serve immediately.
