Method

Preparation

  1. 1

    Prepping the Brisket

Trim any excess fat from the brisket, leaving about 1/4 inch for flavor.

  2. 2

    Making the Rub

In a bowl, mix together coarse salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.

  3. 3

    Applying the Rub

Rub the spice mixture all over the brisket. Ensure it's evenly coated and let it sit at room temperature for 30 minutes.

Cooking

  1. 4

    Setting Up the Smoker

If using a smoker, preheat it to 225°F (107°C). If using an oven, preheat it to the same temperature.

  2. 5

    Adding Liquid

In a large roasting pan, combine beef broth, Worcestershire sauce, and apple cider vinegar. Place the brisket in the pan, fat side up.

  3. 6

    Smoking the Brisket

If using a smoker, add wood chips to the smoker. Place the brisket inside and smoke for about 1.5 to 2 hours per pound, or until the internal temperature reaches 195°F (90°C).

  4. 7

    Oven Cooking (if applicable)

If using an oven, cover the roasting pan tightly with aluminum foil and cook for approximately 5 to 6 hours, or until fork-tender.

Resting and Serving

  1. 8

    Resting the Brisket

Once cooked, remove the brisket from the smoker or oven and let it rest for at least 30 minutes before slicing.

  2. 9

    Slicing and Serving

Slice the brisket against the grain and serve with your choice of sides or on a bun as a sandwich.
