Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt.

  3. 3

    Combine Ingredients

Once the yeast mixture is frothy, pour it into the flour mixture along with beer. Mix until a dough forms.

  4. 4

    Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Shaping Pretzels

  1. 5

    Divide and Shape

Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

  2. 6

    Boil Pretzels

In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel in for about 30 seconds. Remove and place on a baking sheet lined with parchment paper.

  3. 7

    Egg Wash

Brush the boiled pretzels with beaten egg and sprinkle coarse sea salt on top.

Baking

  1. 8

    Bake

Preheat your oven to 450°F (232°C). Bake the pretzels for approximately 12-15 minutes or until golden brown.

Cheese Sauce Preparation

  1. 9

    Make Roux

In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden.

  2. 10

    Add Milk

Gradually whisk in milk, ensuring there are no lumps. Bring to a simmer and allow to thicken.

  3. 11

    Incorporate Cheese and Seasoning

Add cheddar cheese, garlic powder, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.
