Prepare black tea infusion
Brew a strong black tea (assam or English breakfast) using 1 teabag or 1 tsp loose leaves per 4 fl oz of near-boiling water. Steep 3–4 minutes, then cool to room temperature. Measure out 1 oz for the cocktail. You can refrigerate leftovers for another use.

Dry shake (if using egg white)
If using the egg white for a silky foam, add Pathfinder spirit 2 oz, black tea infusion 1 oz, Giffard Aperitif 0.5 oz, fresh lemon juice 0.75 oz, simple syrup 0.5 oz, and egg white 0.5 oz into a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and create foam.

Wet shake
Add a large handful of ice to the shaker (about 4 cubes). Shake again vigorously for 10–15 seconds to chill and dilute properly. If you skipped egg white, combine all liquid ingredients with ice and shake until well chilled (about 12–15 seconds).

Strain and serve
Double-strain the cocktail into a chilled coupe or Nick & Nora glass (use a fine mesh strainer if you used egg white to remove any ice shards and bits of foam).

Garnish
Express the oils of a lemon twist over the surface by pinching it skin-side down, then rub the rim of the glass lightly and drop the twist into the drink. Optionally, lightly slap a small spruce or pine sprig between your palms to release aromatics and lay it on the glass edge (do not burn the sprig).
