Muddle
Place the fresh mint leaves (reserve the sprig for garnish) in a cocktail shaker or mixing glass. Add the simple syrup. Gently muddle the mint leaves 6–8 times to release the oils — you want aroma and flavor without shredding the leaves.

Combine
Add the gin, fresh lemon juice, and a handful of ice to the shaker with the muddled mint and syrup.

Shake
Seal the shaker and shake vigorously for about 10–12 seconds until the outside of the shaker is cold (this chills, slightly dilutes, and integrates the mint).

Strain
Double-strain (using a Hawthorne strainer and a fine mesh strainer) into an ice-filled highball or Collins glass. If you prefer a stirred, clearer drink, you can also fine-strain into a chilled coupe without seltzer and then top with seltzer in the glass.

Top with seltzer
Gently top the drink with about 2 oz (60 ml) of club seltzer to add effervescence. Stir once gently with a bar spoon to combine, taking care not to bruise the mint further.

Garnish & serve
Garnish with the reserved mint sprig and a lemon wheel or twist. Clap the mint between your palms once before garnishing to wake the aromatics. Serve immediately.
