    Prepare chilled glass

    Place a rocks glass or Old Fashioned glass in the freezer for a few minutes or fill it with ice water to chill while you prepare the cocktail.

    Rinse glass with absinthe

    Discard the ice water from the chilled glass (if used). Add 0.25 tsp absinthe to the glass, swirl it around thoroughly to coat the interior (including sides and bottom), then pour out the excess. You can gently tilt and tap to ensure most of the liquid is removed, leaving a thin aromatic coating.

    Mix cocktail

    In a mixing glass, add 2 oz rye whiskey, 3 dashes Peychaud's bitters, 1 dash Angostura bitters, and 0.25 tsp simple syrup. Add 3 large ice cubes and stir briskly for 20–30 seconds (about 15–20 full turns) until well-chilled and slightly diluted.

    Strain and garnish

    Strain the chilled cocktail from the mixing glass into the absinthe-rinsed rocks glass (served neat—no ice). Express the lemon peel over the drink by holding it skin-side down and giving it a sharp twist to release oils, then rub the peel around the glass rim and drop it into the drink as garnish.

    Serve

    Serve immediately. The Sazerac is intended to be sipped slowly — aromatic, spirit-forward, and bitters-accented.
