Pineapple Gomme (if making at home)

    Make pineapple syrup

    Combine chopped fresh pineapple, sugar, and water in a small saucepan. Bring to a gentle simmer over medium-low heat, stirring until the sugar is fully dissolved. Simmer 6–8 minutes to extract pineapple flavor but do not reduce to a thick jam.

    Strain and cool

    Remove from heat and strain the mixture through a fine mesh sieve or cheesecloth, pressing to extract as much liquid as possible. Discard solids. Let the strained syrup cool to warm.

    Add gum arabic and lemon

    While the syrup is still warm, whisk in the gum arabic (pre-dissolved if using powder) until fully incorporated, then stir in 1/2 oz fresh lemon juice. Allow to cool completely. This is your pineapple gomme. Yield ~1 to 1 1/4 cups.

Cocktail Assembly

    Chill glass

    If serving over ice in a rocks glass, fill the glass with ice to chill while you mix the cocktail.

    Combine ingredients

    In a cocktail shaker add 3 oz pisco, 1.5 oz pineapple gomme, 0.75 oz fresh lemon juice, and 0.5 oz fresh pineapple juice. If you prefer a slightly sweeter drink, add 0.25 oz simple syrup. Add 2 dashes Angostura bitters.

    Shake

    Fill the shaker with ice (about 3/4 full or ~1 cup) and shake vigorously for 10–15 seconds until the shaker is cold to the touch and the exterior is frosted—this aerates and chills the mix, giving a silky texture from the gomme.

    Strain and finish

    Discard ice from the chilled serving glass (if used) and add fresh ice (large cube or crushed, as desired). Double-strain the shaken cocktail into the glass to remove small ice chips and any pulp. Top with 1 oz club soda or sparkling water if you want a lighter, more effervescent drink.

    Garnish and serve

    Express a lemon wheel over the cocktail to release oils, then drop it in. Garnish with a pineapple wedge or twist on the rim. Serve immediately.
