Pimm's Base

Combine Spirit
In a highball or large Collins glass (about 12–16 oz capacity) add 3 tablespoons Pimm's No.1 and 1 tablespoon London dry gin.

Add ½ oz fresh lemon juice and ½ teaspoon simple syrup to the glass. Stir briefly to combine the Pimm's, gin and citrus/sugar.

Fill the glass about 3/4 full with ice. Pour 6 oz chilled ginger ale (or ginger beer) gently over the ice to preserve carbonation.

Stir once or twice with a bar spoon to integrate the mixer without flattening it.
Garnish & Fruit

Slap 3 sprigs of mint between your palms to release aroma and place on top as a garnish.

Top with additional ice if desired, give one final gentle stir, and serve with a straw or long spoon.
