    Prep the bread

    Preheat oven to 350°F (175°C). Using a serrated knife, split the baguette horizontally. Lightly brush the cut interior of both halves with 1 tablespoon of olive oil. Place the halves cut-side up on a baking sheet and warm in the oven for 5–7 minutes until slightly crisp but not browned. Remove and set aside.

    Slice the cheese and tomato

    While the bread warms, slice the fresh mozzarella into 1/4-inch (6 mm) thick slices. Slice the Roma tomato into 1/4-inch rounds and pat the tomato slices dry with a paper towel to remove excess moisture.

    Layer the meats and cheese

    On the bottom half of the warmed baguette, arrange the salame slices in an even layer, slightly overlapping. Add the chorizo slices on top of the salame, then the ham. Tuck mozzarella slices over the meats so they cover evenly. Place tomato slices on top of the mozzarella. Scatter fresh basil leaves and, if using, baby arugula evenly over the tomato.

    Make the dressing

    In a small bowl or jar, combine the remaining 1 tablespoon olive oil, red wine vinegar, Dijon mustard, salt, and black pepper. Whisk or shake until emulsified. Taste and adjust seasoning. If you like heat, stir in crushed red pepper flakes.

    Dress and finish

    Drizzle half of the dressing over the layered sandwich ingredients on the bottom half of the baguette. Close the top half of the baguette and press gently to compress the sandwich slightly. Cut into 2–4 portions as desired. Serve immediately, passing remaining dressing at the table if desired.
